The Teolis vineyard, located in the commune of Moraro, isplanted in soil a bit sturdier than the Isonzo average, since it has a greater percentage of fine-grained materials: silt and clay. It is our heaviest soil, which provides slower initial growth for the vine and generous reserves of water.The grapes are harvested at the peak of aromatic development,which can be accurately determined through measuring thestable aromatics that are classic to sauvignon blanc. Overnight whole-berry cool maceration, followed byfermentation at 15-18°C, then maturation sur lees until May2012, bottle-ageing, and release to market in Dec-Jan 2012-13.
